Black Bean Brownies

When you think of "brownies," sweet images of soft, fudgy chocolate treats fill your mind. But what if you could make these delightful desserts even healthier without giving up taste? Introducing the hidden superhero of baking: black beans. This may sound unusual, but using black beans in brownies is truly a game changer.

Ingredients:
2 tbsp ground flax seeds
2 tbsp water
1/3 cup espresso or pour over coffee
1 cup all purpose flour
1/4 cup almond flour
1 tsp baking powder
1/4 cup cacao powder
1/2 tsp salt
Pinch of cinnamon
1/3 cup light brown sugar
2 tsp vanilla
1 1/2 cups black beans
160 grams dark chocolate for melting
1/4 cup coconut oil
1/4 cup chocolate chips plus some extra for sprinkling on top.
Instructions:
Preheat the oven to 350 degrees Fahrenheit and line a 9x9 pan with parchment paper.
Place the black beans, water, ground flax seeds, coffee, and light brown sugar into a food processor and blend until smooth.
In a large bowl, sift together the all purpose flour, almond flour, baking powder, cacao powder, salt and cinnamon and mix well.
In a small sauce pan, create a double boiler by filling the pan with 1 inch of water and then placing a large, glass bowl on top of the saucepan over medium heat. Add the chocolate and coconut oil. Stir until the chocolate is completely melted.
Add the melted chocolate to the black bean mixture and combine.
Add the chocolate and black bean mixture to the dry ingredients and stir until just combined, being careful not to over mix. Carefully fold in the 1/4 cup of chocolate chips.
Pour the mixture into the pan, then scatter chocolate chips and a pinch of salt over the top.
Bake for 35 minutes.
Take the brownies out and allow them to rest for a minimum of 30 minutes before serving.
