Greek salad dressing is both simple and fragrant. This recipe includes high quality olive oil, red wine vinegar, lemon juice, garlic, dijon mustard, oregano, and a pinch of salt. This combination elevates fresh ingredients such as tomatoes, cucumbers, and bell peppers into a flavorful medley. The right balance of acidity and richness is vital because it enhances the overall taste experience.





Ingredients

  • 1/3 cup plus 1 tbsp extra virgin olive oil

  • 1/3 cup red wine vinegar

  • Juice of one lemon

  • 1 tsp dijon mustard

  • 2-3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried parsley

  • Salt and pepper to taste


Instructions

  1. In a medium-sized bowl, whisk together the olive oil, red wine vinegar, dijon mustard and lemon juice until well combined.

  2. Stir in the minced garlic, oregano, parsley, salt, and pepper.

  3. Store in a glass jar with a tight-fitting lid. Shake well before each use. This dressing lasts up to a week in the refrigerator.
