Greek salad dressing is both simple and fragrant. This recipe includes high quality olive oil, red wine vinegar, lemon juice, garlic, dijon mustard, oregano, and a pinch of salt. This combination elevates fresh ingredients such as tomatoes, cucumbers, and bell peppers into a flavorful medley. The right balance of acidity and richness is vital because it enhances the overall taste experience.

Ingredients
1/3 cup plus 1 tbsp extra virgin olive oil
1/3 cup red wine vinegar
Juice of one lemon
1 tsp dijon mustard
2-3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried parsley
Salt and pepper to taste
Instructions
In a medium-sized bowl, whisk together the olive oil, red wine vinegar, dijon mustard and lemon juice until well combined.
Stir in the minced garlic, oregano, parsley, salt, and pepper.
Store in a glass jar with a tight-fitting lid. Shake well before each use. This dressing lasts up to a week in the refrigerator.
