Rosemary White Bean Soup

Nothing warms the soul quite like a steaming bowl of soup. This soup shines for its delightful mix of earthy white beans and fragrant rosemary. This hearty, fibre-rich bean and rosemary soup not only provides comfort but also packs a significant nutritional punch.



Health Advantages of Beans


Beans come in various shapes and types, each offering unique health benefits. They are commonly recognized as a superfood due to their impressive nutritional profile. Packed with protein and carbohydrates, beans are a perfect ingredient for those seeking plant-based energy sources.


In addition to their ability to provide sustained energy, beans are rich in dietary fibre. For example, a single serving of black beans provides around 15 grams of fibre, which significantly contributes to healthy digestion and cholesterol management. Beans are also low in fat, with a typical serving containing less than 1 gram of total fat, making them a heart-healthy choice.


Ingredients:

  • 1/2 white onion, finely chopped

  • 1 tbsp avocado oil

  • 5 garlic cloves, minced

  • 2 small cans Cannellini beans

  • 1 1/2 or 2 full veggie bouillon cubes

  • 3 cups water

  • 1/2 tsp salt

  • 2 tbsp fresh rosemary

  • 1/4 tsp crushed pepper flakes

  • 3 stalks celery, chopped


Instructions:

  1. Add the avocado oil to a medium pot.

  2. Sauté onions, garlic and celery until translucent.

  3. Add the pepper flakes and rosemary and stir for a minute.

  4. Add the beans, bouillon cubes and water and let simmer for 20 minutes.

  5. Using a handheld mixer, blend the soup until smooth.
