Ingredients:
1/2 white onion, finely chopped
1 tbsp avocado oil
5 garlic cloves, minced
2 small cans Cannellini beans
1 1/2 or 2 full veggie bouillon cubes
3 cups water
1/2 tsp salt
2 tbsp fresh rosemary
1/4 tsp crushed pepper flakes
3 stalks celery, chopped
Instructions:
Add the avocado oil to a medium pot.
Sauté onions, garlic and celery until translucent.
Add the pepper flakes and rosemary and stir for a minute.
Add the beans, bouillon cubes and water and let simmer for 20 minutes.
Using a handheld mixer, blend the soup until smooth.
