Simple Chickpea Curry

Chickpea curry is a warm, comforting dish that has captured the hearts of many across the globe. It is not only easy to prepare, but it is also packed with nutrients. This makes it a perfect meal for busy weeknight dinners or a quick lunch option. In this post, we will explore how to create a simple chickpea curry that is both delicious and satisfying.

Ingredients:
4 cloves garlic, minced
1/2 yellow onion, diced
1 tbsp avocado oil
3 tbsp curry powder
1 cup water
1 bouillon cube
2 tsp ground cumin
1 tsp paprika
1 tbsp flour
2 1/2 cups Crushed tomatoes (one large can)
1 3/4 cup coconut milk (one small can)
2 1/2 cups of Chickpeas (one large can)
3 - 4 cups of broccoli
Instructions:
Pour the avocado oil into a large pot.
Add the onions and garlic and cook until they become translucent.
Stir in the spices and continue stirring for a few minutes.
Pour in the coconut milk, tomatoes, and water. Stir thoroughly and let it simmer for 10 minutes.
Cook the chickpeas and broccoli for five minutes, then turn off the heat to prevent the broccoli from overcooking.
Served with naan, rice, or noodles.
