A surprising ingredient that can boost protein: silken tofu. As if protein weren't already an added bonus, this recipe also packs a punch with antioxidants from the cacao powder! The Health Benefits of Cacao Powder


Cacao powder is the star of this recipe and brings along impressive health perks. Unlike processed chocolate, cacao retains its nutritional value. It is loaded with antioxidants, particularly flavonoids, which may help improve heart health and support better circulation.


Research shows that incorporating cacao into your diet can enhance mood and cognitive function. Ingredients:

  • 1/4 cup cacao powder (you can sub for cocao powder if need be)

  • 1 tbsp maple syrup

  • 2 tsp vanilla

  • 70 grams melted chocolate (add more if you'd like)

  • 340 grams silken tofu

  • Pinch of cinnamon

  • 2 tbsp PB2 or 1 TBSP peanut butter


Instructions:

  1. Pour 2 inches of water into a small saucepan and place it on the stovetop over medium heat.

  2. Place the chocolate in a glass bowl that is larger than the saucepan.

  3. Position the glass bowl over the saucepan and continuously stir the chocolate until it melts.*

  4. Place all the ingredients, along with the melted chocolate, into a blender.

  5. Blend until smooth.

  6. Chill in the refrigerator for at least an hour before serving to allow the mousse to set.


Note:

*Alternatively, you can melt the chocolate in the microwave, but make sure to heat it in intervals of no more than 20 seconds, stirring in between each interval.
