Vegan Pulled 'Pork' Sandwiches

Pulled pork sandwiches are a timeless favorite. They boast tender meat, tangy sauces, and delightful textures. But what if you could enjoy that same mouthwatering experience without the meat? Enter King Oyster mushrooms—your new best friend in the pulled pork world. These hearty mushrooms not only mimic the incredible taste and texture of pulled pork, but they also offer numerous health benefits.

Makes 3 sandwiches | Prep 10 mins | Cook 35 mins
Ingredients:
8 King Oyster mushrooms
1 tbsp olive oil
1 tsp taco seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp salt
1/2 cup barbeque sauce
2 cups coleslaw (recipe can be found on the blog)
Vegan mayo or garlic aioli
3 kaiser buns
Instructions:
Preheat the oven to 185°C (365°F).
With a fork, tear the mushrooms until they have the appearance of pulled pork.
Add the mushrooms to a lined baking tray.
Drizzle the olive oil and spices over the mushrooms and mix until they are evenly coated.
Bake for 30 minutes, taking it out of the oven halfway through to stir.
Take the mushrooms out of the oven and transfer them to a frying pan.
Sauté the mushrooms for five minutes, incorporating the BBQ sauce.
Assemble the by adding some vegan mayo or garlic aioli to a kaiser bun, a generous amount of coleslaw and 1/3 of the pulled mushroom mixture.
