Rosemary White Bean Soup

- 1/2 white onion finely chopped
- 3 stalks celery chopped
- 1 tbsp avocado oil
- 5 garlic cloves minced
- 2 small cans Cannellini beans
- 1 1/2 or 2 full veggie bouillon cubes
- 3 cups water
- 1/2 tsp salt
- 2 tbsp fresh rosemary
- 1/4 tsp crushed pepper flakes optional
Instructions
- Add the avocado oil to a medium pot.
- Sauté onions, garlic and celery until translucent.
- Add the pepper flakes and rosemary and stir for a minute.
- Add the beans, bouillon cubes and water and let simmer for 20 minutes.
- Using a handheld mixer, blend the soup until smooth.
