Ingredients

  • 1/2 white onion finely chopped
  • 3 stalks celery chopped
  • 1 tbsp avocado oil
  • 5 garlic cloves minced
  • 2 small cans Cannellini beans
  • 1 1/2 or 2 full veggie bouillon cubes
  • 3 cups water
  • 1/2 tsp salt
  • 2 tbsp fresh rosemary
  • 1/4 tsp crushed pepper flakes optional

Instructions

  • Add the avocado oil to a medium pot.
  • Sauté onions, garlic and celery until translucent.
  • Add the pepper flakes and rosemary and stir for a minute.
  • Add the beans, bouillon cubes and water and let simmer for 20 minutes.
  • Using a handheld mixer, blend the soup until smooth.
