It’s peach season!!! Here in Canada peach season is short so make the most of it with this delicious, healthy blueberry peach crumble. Serve with vegan vanilla ice cream or vegan yogurt to bring out the natural sweetness in the fruit. This is the perfect summer dessert!

Blueberry Peach Crumble

- 8 peaches peeled and cut into small pieces
- 2 cups blueberries frozen or fresh*
- 1 cup rolled oats
- 1/2 cup sliced almonds
- pinch of salt
- 2 tsps cinnamon
- 2 tbsp light brown sugar
- 3 – 4 tbsp vegan butter melted**
Instructions
- Preheat the oven to 350F.
- Place the blueberries and peaches in a deep baking dish. I used a pie dish but any deep baking dish will work.
- In a separate bowl, mix together the oats, almonds, salt, cinnamon, brown sugar and melted vegan butter.
- Sprinkle the oat mixture over the fruit, spreading evenly over the top.
- Bake for 35 minutes. Remove and let cool for about 20 minutes before serving.
Notes
* You can substitute blueberries for berries of your choice.
** Because this version of peach crumble is a bit less indulgent, it tends to fall apart more than traditional crumble. If you want the topping to stick together better, use 4 tablespoons of butter.
