How to Make Lemon Blueberry Oatmeal Cookies

1. Prepare the Oven

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

2. Cream the Butter and Sugars

In a large mixing bowl, beat the softened butter (or brown butter as per the instructions below), granulated sugar, and brown sugar until light and creamy, about 2–3 minutes.

Add the eggs. Stir in the lemon zest, lemon extract, and vanilla extract.

3. Combine the Dry Ingredients

In a separate bowl, whisk together the rolled oats, flour, baking powder, baking soda, xanthan gum and salt.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing, as this can make the cookies less tender.

4. Fold in the Blueberries

Gently fold the blueberries into the cookie dough. If using fresh blueberries, work carefully so they don’t burst and turn the dough completely purple.

For easier handling, you can chill the dough for about 20–30 minutes before baking.

5. Scoop the Dough

Using a cookie scoop or tablespoon, portion the dough onto the prepared baking sheets. Leave about 2 inches of space between each cookie to allow them to spread.

6. Bake

Bake for 10–13 minutes, or until the edges are lightly golden and the centers still look slightly soft.

Don’t overbake the cookies. They’ll continue to set as they cool, and keeping the centers slightly underdone helps create that soft, chewy texture.

7. Cool

Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

8. Add Lemon Glaze

For an extra burst of lemon flavor, whisk the powdered sugar, lemon extract, vanilla and milk together until smooth. Drizzle the glaze over the cooled cookies and let it set before serving.

Tips for the Best Lemon Blueberry Oatmeal Cookies

Use fresh lemon zest. The zest contains flavorful citrus oils that give these cookies a much stronger lemon flavor than lemon juice alone.

Use old-fashioned rolled oats. They provide the best chewy texture. Quick oats can work in a pinch, but the finished cookies will be softer and less textured.

Don’t overmix the dough. Mix the ingredients just until no dry flour remains for tender cookies.

Be gentle with the blueberries. Fresh blueberries can burst easily. Fold them into the dough carefully to keep the berries intact.

Chill sticky dough if needed. If your dough seems too soft, refrigerate it for 20–30 minutes before scooping.

Don’t overbake. Remove the cookies when the edges are lightly golden but the centers still appear soft.

Fresh or Frozen Blueberries?

Both fresh and frozen blueberries can be used in this recipe.

Fresh blueberries are ideal when they’re in season and are less likely to release excess moisture into the dough. If using frozen blueberries, don’t thaw them first. Fold them into the dough while still frozen and add a minute or two to the baking time if necessary.

Can I Make These Cookies Ahead of Time?

Yes! The cookie dough can be prepared ahead of time and refrigerated for up to 2 days. Keep it tightly covered and let it sit at room temperature for a few minutes if it’s too firm to scoop.

You can also freeze scooped cookie dough portions. Place them on a baking sheet until firm, then transfer them to a freezer-safe container or bag. Bake directly from frozen, adding a couple of minutes to the baking time.

How to Store Lemon Blueberry Oatmeal Cookies

Store completely cooled cookies in an airtight container at room temperature for up to 4 days.

For longer storage, freeze the cookies in an airtight freezer-safe container for up to 3 months. Allow them to thaw at room temperature before serving.

Frequently Asked Questions

Can I use dried blueberries?

Yes. Dried blueberries are a convenient alternative to fresh blueberries. Since they’re less moist, they will give the cookies a slightly different texture but still pair beautifully with lemon and oats.

Can I make these cookies without the glaze?

Absolutely. The cookies have plenty of lemon flavor on their own. The glaze simply adds an extra layer of sweetness and citrus flavor.

Why did my blueberries make the cookies purple?

That’s completely normal! Blueberries can release their juices when they’re folded into the dough, especially if they’re very ripe. For less streaking, handle them gently and avoid overmixing.
