Gluten-free Peach Cobbler

Ingredients
- Filling Ingredients:
- 8-10 peaches skin peeled off and cut into thin wedges
- 2 tbsp white sugar
- 2 tbsp light brown sugar
- 1 tsp cinnamon
- 1 tsp lemon
- 1 tsp vanilla
- 1 tbsp cornstarch
- Topping Ingredients:
- 1 cup gluten free flour I use the Bob’ Red Mill All Purpose
- 1/3 light brown sugar
- 1/4 white sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 plant milk
- 6 tbsp butter
Instructions
- Preheat the oven to 185°C (365°F).
- Place all the filling ingredients in a saucepan over medium heat. Stir for five minutes until the peaches become tender. Once cooked, transfer the peaches to a small casserole dish.
- In a bowl, mix the topping ingredients, adding the butter at the end. Use your hands or a fork to blend the butter into the flour mixture.
- Spoon the batter over the peaches without spreading it.
- Bake for 30 minutes and allow to cool before serving.
