Gluten-free Peach Cobbler

Ingredients

  • Filling Ingredients:
  • 8-10 peaches skin peeled off and cut into thin wedges
  • 2 tbsp white sugar
  • 2 tbsp light brown sugar
  • 1 tsp cinnamon
  • 1 tsp lemon
  • 1 tsp vanilla
  • 1 tbsp cornstarch
  • Topping Ingredients:
  • 1 cup gluten free flour I use the Bob' Red Mill All Purpose
  • 1/3 light brown sugar
  • 1/4 white sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 plant milk
  • 6 tbsp butter

Instructions

  • Preheat the oven to 185°C (365°F).
  • Place all the filling ingredients in a saucepan over medium heat. Stir for five minutes until the peaches become tender. Once cooked, transfer the peaches to a small casserole dish.
  • In a bowl, mix the topping ingredients, adding the butter at the end. Use your hands or a fork to blend the butter into the flour mixture.
  • Spoon the batter over the peaches without spreading it.
  • Bake for 30 minutes and allow to cool before serving.
