High-Protein Chocolate Pudding

Desserts can indeed be both delicious and nutritious. This high-protein vegan chocolate pudding is a perfect example. It’s a delightful way to end the day on a sweet note while still nourishing your body.

High-Protein Chocolate Pudding

2 large servings or 4 small servings

Ingredients

  • 1/4 cup cocoa powder
  • 1 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1/4 cup 40 grams melted vegan dark chocolate
  • 340 grams silken tofu
  • pinch of cinnamon optional

Instructions

  • Place the chocolate in a small glass dish and microwave for 15 seconds. Remove, stir and microwave for another 15 seconds. Repeat until the chocolate is completely melted.
  • Place all remaining ingredients along with melted chocolate into a blender and blend until you get a smooth, pudding-like consistency.
  • Pour the pudding into small glass bowls and refrigerate for 30 minutes.

Notes

This dessert stores well for 4 days in the fridge. Some water from the tofu will separate while it sits in the fridge. Just be sure to stir prior to enjoying.
Add berries to bump up the nutritional value of this already healthy dessert.
