Ingredients
- 150 grams udon noodles
- 1 large bell red pepper cut into strips
- 1 cup shelled edamame
- 270 grams cremini mushrooms
- 2 tbsp water
- chilli flakes optional
Miso Sauce Ingredients:
- 3 tbsp miso paste
- 2 tbsp tamari
- 1/2 inch grated ginger
- 1 grated garlic
- 1/4 cup water
- 1/2 tbsp sesame oil
- 1/2 tbsp rice vinegar
- 1 tbsp almond butter
Instructions
- Place the mushrooms and water in a frying pan over medium heat. Sauté the mushrooms for approximately 10 minutes until they become soft.
- Add the red pepper strips and cook them for 5 minutes.
- In the meantime, prepare the noodles as directed on the package.
- Soak the edamame in hot water for five minutes to soften them.
- After the noodles are done, transfer them to the frying pan and drizzle the sauce over them. Stir thoroughly and cook for five minutes.
- Before serving, add the drained edamame to the noodles.
