Miso Noodle Stir-Fry

Ingredients

  • 150 grams udon noodles
  • 1 large bell red pepper cut into strips
  • 1 cup shelled edamame
  • 270 grams cremini mushrooms
  • 2 tbsp water
  • chilli flakes optional

Miso Sauce Ingredients:

  • 3 tbsp miso paste
  • 2 tbsp tamari
  • 1/2 inch grated ginger
  • 1 grated garlic
  • 1/4 cup water
  • 1/2 tbsp sesame oil
  • 1/2 tbsp rice vinegar
  • 1 tbsp almond butter

Instructions

  • Place the mushrooms and water in a frying pan over medium heat. Sauté the mushrooms for approximately 10 minutes until they become soft.
  • Add the red pepper strips and cook them for 5 minutes.
  • In the meantime, prepare the noodles as directed on the package.
  • Soak the edamame in hot water for five minutes to soften them.
  • After the noodles are done, transfer them to the frying pan and drizzle the sauce over them. Stir thoroughly and cook for five minutes.
  • Before serving, add the drained edamame to the noodles.
