Ingredients

Blueberry Filling

  • 5 cups frozen or fresh blueberries
  • 2 tbsp cornstarch
  • 2 tbsp white sugar
  • Zest from one lemon
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla

Cookie Crumble

  • 1/2 unsalted butter, melted
  • 1/4 cup plus 2 tbsp light brown sugar
  • 2 tbsp granulated sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 3/4 all purpose flour
  • 1 1/2 rolled oats
  • 1/2 tsp cinnamon
  • 1/2 baking soda
  • 1/2 tsp salt

Instructions

  • Preheat your oven to 350°F (175°C) and prepare a baking dish.
  • Add the blueberries, cornstarch, light brown sugar, granulated sugar, lemon zest, lemon juice, and vanilla to the dish. Stir everything together until well combined.
  • In a medium bowl, prepare the crumble topping by mixing flour, oats, cinnamon, baking soda, sugars, and salt.
  • Add the melted butter, vanilla, and egg, then stir until the mixture forms a dough similar to oatmeal cookie dough.
  • Using your hands, gently distribute the cookie dough over the blueberry mixture, making sure not to press it down into the berries.
  • Bake for 25–30 minutes, or until the topping turns golden brown.
  • Remove from the oven and let it cool for about 30 minutes before serving.
