Crispy Lentil Nourish Bowl

Ingredients

  • 1 large sweet potato
  • 3 cups frozen broccoli
  • 398 ml can of cooked lentils
  • 1 tbsp olive oil
  • 1 tsp onion powder garlic powder, dried dill and dried parsley
  • 2 tsp nutritional yeast
  • 1/2 tsp salt

Instructions

  • Preheat the oven to 350°F.
  • With a sharp knife, gently pierce the sweet potato in several places about 5-7 times before putting it in the oven.
  • Open the can of lentils, then drain and rinse them. Spread the lentils on a clean kitchen towel and gently pat them dry.
  • Place the lentils on a baking tray lined with parchment paper.
  • Toss the lentils in the olive oil. Then, add the seasoning and mix thoroughly.
  • Bake the lentils for 30 minutes, stirring halfway through.
  • To cook the broccoli, just place it in a frying pan over medium heat, cover it, and allow it to cook for 10 minutes.
  • To serve, slice the sweet potato in half and arrange it on a plate with half of the broccoli and half of the lentils, then drizzle the green goddess sauce over the top.
