Hearty Black Bean Burgers

Ingredients

  • 1 1/2 canned black beans drained and rinsed
  • 1 1/4 cup panko breadcrumbs
  • 1/2 canned corn
  • 1/3 cup fresh cilantro
  • 3 garlic cloves minced
  • 1 green onion finely chopped
  • 3 tbsp bbq sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 1 tbsp flax seeds
  • 1 jalapeno minced
  • 1 tsp paprika
  • 1 tbsp neutral oil

To Serve

  • 6 brioche buns
  • 6 tsp ketchup
  • 6 tsp mayo
  • 1/4 red onion sliced
  • 6 slices cheddar cheese sub for vegan cheese
  • lettuce
  • 3 pickles sliced

Instructions

  • Preheat your oven to 350°F (185°C) and prepare a baking sheet by lining it with parchment paper.
  • Add all the black bean patty ingredients to a food processor and blend until a thick, smooth mixture forms.
  • Scoop the mixture into six equal portions, then shape each portion into a patty.
  • Place the patties on the prepared baking sheet and lightly spray both sides with olive oil.
  • Bake for 20 minutes, flipping the patties halfway through.
  • Once done, remove them from the oven and assemble your burgers.

Notes

  • To freeze the patties, place a small piece of parchment paper in between each patties and place in a freezer friendly bag.  Freeze for up to 2 months.
