Roasted Garlic Tofu Cream Cheese

Ingredients

  • 350 grams firm tofu
  • Juice from one lemon
  • 1 1/2 tbsp olive oil
  • 1 bulb of garlic plus 1 tbsp olive oil for roasting
  • 1/4 cup cashews
  • 1/3 cup nutritional yeast
  • 2 tbsp fresh dill chopped

Instructions

  • Preheat the oven to 350 F (180 C).
  • Cut the top off of a whole garlic bulb, drizzle it with a tablespoon of olive oil, and sprinkle with salt.
  • Bake the garlic until it becomes soft. You can use a fork to test its tenderness. This takes about 20 minutes.
  • Combine the tofu, lemon juice, olive oil, roasted garlic, cashews, and nutritional yeast in a food processor and blend until smooth.
  • Mix thoroughly after adding the chopped dill.
