Soba Noodle Nourish Bowls with Spicy Peanut Lime Sauce

Ingredients

Soba Bowl Ingredients:

  • 250 grams soba noodles
  • 2 roasted peppers
  • 1 large carrot shaved
  • 3 tbsp crushed peanuts

Spicy Peanut Sauce:

  • 2 cloves garlic minced
  • juice from one lime
  • 1/4 cup peanut butter
  • 2 tbsp tamari
  • 2 tbsp coconut milk
  • 2 tsp sesame oil
  • 1 tsp harissa paste add less if you don't like spice
  • 1/4 cup water
  • 2 tsp rice vinegar
  • 1/2 tbsp grated ginger
  • 1 tsp light brown sugar

Roasted Broccoli:

  • 2 heads of broccoli
  • 2 tbsp olive oil
  • 1 tbsp nutritional yeast
  • 1 tsp onion
  • 1 tsp garlic powder
  • 1/2 tsp salt

Simple Crispy Tofu:

  • 450 grams extra firm tofu
  • 1/4 cup cornstarch
  • 1 tbsp avocado oil
  • 1/2 tsp salt

Instructions

  • Set the oven to 185°C (350°F) to preheat.
  • Place the broccoli florets in a bowl and drizzle with 2 tablespoons of olive oil.
  • Then, add the nutritional yeast, onion powder, garlic powder, and salt.
  • Place the broccoli on a baking sheet lined with parchment paper and bake for 30 minutes.
  • While the broccoli is in the oven, prepare the tofu by cutting it into squares.
  • coat it with cornstarch and then drizzle over the avocado oil and sprinkle some salt on top.
  • Bake the tofu for 25 minutes, flipping the pieces halfway through the cooking time.
  • While the broccoli and tofu are in the oven, prepare the sauce by combining all the ingredients in a glass jar and mixing thoroughly.
  • Prepare your soba noodles as directed on the package.
  • To assemble, place your soba noodles in a bowl along with the broccoli, shaved carrots, crispy tofu, and roasted red peppers. Drizzle the sauce over everything and enjoy!
