Instructions
Heat the oven to 350°F (175°C) and lightly coat a 12-cup muffin pan with cooking spray.
Place the eggs and cottage cheese in a food processor or blender and blend until the cottage cheese becomes smooth.
Transfer the blended mixture to a medium bowl. Add the chopped bell peppers, spinach, salt, and pepper, then stir until everything is well combined.
Divide the mixture evenly among the muffin cups, filling each with about ¼ cup.
Sprinkle feta cheese over the top of each uncooked egg bite.
Bake for about 25 minutes, until the tops are lightly golden and the egg bites begin to pull slightly away from the sides of the muffin pan.
