Spinach & Feta Egg Bites

Ingredients

  • 10 eggs
  • 1 cup cottage cheese
  • 1 bell pepper finely chopped
  • 3 breakfast sausages finely chopped (I opted for vegan ones)
  • 1 cup chopped spinach finely chopped
  • 1 cup feta

Instructions

  • Heat the oven to 350°F (175°C) and lightly coat a 12-cup muffin pan with cooking spray.
  • Place the eggs and cottage cheese in a food processor or blender and blend until the cottage cheese becomes smooth.
  • Transfer the blended mixture to a medium bowl. Add the chopped bell peppers, spinach, salt, and pepper, then stir until everything is well combined.
  • Divide the mixture evenly among the muffin cups, filling each with about ¼ cup.
  • Sprinkle feta cheese over the top of each uncooked egg bite.
  • Bake for about 25 minutes, until the tops are lightly golden and the egg bites begin to pull slightly away from the sides of the muffin pan.
