Vegan Chocolate Mousse

Ingredients

  • 1/4 cup cacao powder you can sub for cocao powder if need be
  • 1 tbsp maple syrup
  • 2 tsp vanilla
  • 70 grams melted chocolate add more if you'd like
  • 340 grams silken tofu
  • Pinch of cinnamon
  • 2 tbsp PB2 or 1 tbsp peanut butter

Instructions

  • Pour 2 inches of water into a small saucepan and place it on the stovetop over medium heat.
  • Place the chocolate in a glass bowl that is larger than the saucepan.
  • Position the glass bowl over the saucepan and continuously stir the chocolate until it melts.*
  • Place all the ingredients, along with the melted chocolate, into a blender.
  • Blend until smooth.
  • Chill in the refrigerator for at least an hour before serving to allow the mousse to set.

Notes

*Alternatively, you can melt the chocolate in the microwave, but make sure to heat it in intervals of no more than 20 seconds, stirring in between each interval.
