Mexican Rice

Mexican rice, often referred to as Spanish rice, is a flavorful dish frequently found in Mexican households. More than just a side, it reflects the vibrant traditions and cultural richness of Mexico. The combination of fresh ingredients and simple cooking methods results in a hearty dish that pairs well with many main courses.

Ingredients

  • 1 cup uncooked rice
  • 1 tbsp oil
  • 1/2 chopped onion
  • 3 cloves minced garlic
  • 1 bouillon cube
  • 3 cups water
  • 2 tbsp tomato paste
  • 2 tbsp fajita seasoning
  • Chopped poblano peppers or any mild pepper

Instructions

  • Start by heating the oil in a frying pan on medium heat.
  • Add garlic, onion and peppers and cook until the onions are translucent.
  • Add the rice and stir for 3-4 minutes until it is lightly toasted.
  • Add the water, vegetable bouillon cube, tomato paste and fajita seasoning.
  • Stir every few minutes until the rice is fully cooked. If the water is absorbed and the rice remains uncooked, feel free to add more water.
  • Store in the fridge immediately after cooking.
