Ingredients

  • 25 30 shishito peppers
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 cup mayo
  • 1 clove garlic minced
  • zest from one lemon
  • juice from half a lemon
  • pinch of salt

Instructions

  • Preheat the oven to 180°C (350°F).
  • Begin by placing your shishito peppers in a baking dish.
  • Coat the peppers with olive oil and season with salt.
  • Bake for 45 minutes.
  • While the peppers bake, combine the mayo, minced garlic, lemon zest, lemon juice, and a pinch of salt.
