Combine the peanut butter, maple syrup, almond flour, rolled oats and vanilla in a bowl. This will form a dough.
Line a 9x9 baking dish with parchment.
Transfer the dough to the baking dish. Using a spatula, spread the dough out evenly and press the dough to flatten the surface.
Evenly sprinkle the peanuts over the oats bars.
Melt the chocolate chips with the coconut oil. When melting chocolate in the microwave, I recommend doing this in 15 second increments, stirring in between to make sure the chocolate doesn't burn.
Pour the melted chocolate over the oat bars and place this in the fridge for at least 30 minutes.
Remove from the fridge and top with flaky sea salt.
