Peanut Butter Oat Bars

Ingredients

  • 1 cup peanut butter
  • 1/2 cup maple syrup
  • 1 cup almond flour
  • 1 cup rolled oats
  • 1/2 cup unsalted peanuts
  • 1 1/2 tsp vanilla
  • 1/2 cup chocolate chips
  • 1 tbsp coconut oil

Instructions

  • Combine the peanut butter, maple syrup, almond flour, rolled oats and vanilla in a bowl. This will form a dough.
  • Line a 9x9 baking dish with parchment.
  • Transfer the dough to the baking dish. Using a spatula, spread the dough out evenly and press the dough to flatten the surface.
  • Evenly sprinkle the peanuts over the oats bars.
  • Melt the chocolate chips with the coconut oil. When melting chocolate in the microwave, I recommend doing this in 15 second increments, stirring in between to make sure the chocolate doesn't burn.
  • Pour the melted chocolate over the oat bars and place this in the fridge for at least 30 minutes.
  • Remove from the fridge and top with flaky sea salt.
