Vegan Feta

Ingredients

  • 1/2 block firm tofu roughly 175 - 200 grams
  • 2 tbsp nutritional yeast
  • 1/4 cup olive oil
  • Juice of two lemons
  • 3 crushed garlic cloves
  • 1 tbsp oregano
  • 2 tsp dried dill
  • 1/4 tsp onion powder
  • 1 tbsp miso paste
  • 3 tbsp apple cider vinegar

Instructions

  • Begin by pressing your tofu to release as much liquid as you can.
  • Next, slice the tofu into small squares or break it into small pieces.
  • Add all the remaining ingredients to a medium mason jar and stir.
  • Add the tofu, cover with the lid, and shake.
  • Allow the tofu feta to marinate in the refrigerator for at least 12 hours before serving.
